Every time I reboot my MacBook Pro my mail defaults to "sort by unread" so I have to reset the view each time. How do I set the default to "sort by date" which include all the read messages as well as unread?

First, could you please confirm if your Mac is fully up to date? You can check that using these steps: Update macOS on Mac
If so, could you please try creating a new user and see if changing that setting in the new user account seems to work as expected or if you see the same behavior. This will help with making a new user: Set up users, guests, and groups on Mac

I can guarantee that my MacBook Pr 16" is up to date with the latest Big Sur update 11.4. I have now set up an alternate user and the email sort priority defaults to sort by date, newest first. I have now restarted in my primary user account and the mail view defaults to unread so I have to reset it to view by date once again.
I sure hope you have a solution.

Well, will wonders never cease. Apparently setting up the second user fixed the problem. I have no idea why, but it seems to have done it now. Thank you.
