If you go in your menu to Help > Numbers Help you will find the same content as can be found at https://support.apple.com/guide/numbers/welcome/mac.
You can also download an ebook in your Books app. Go to the Store there and search for this:

Macmost.com has some excellent videos explaining various features in Numbers
And be sure to have a look at the built-in templates at File > New in your menu to understand the design differences between Numbers and Excel . The templates provide good examples of effective use of tables and charts in Numbers.
