The burst mode is activated by Gestures or pressing buttons. You can disable the volume up button to take a burst: "With iOS 14, you can capture photos in burst mode by pressing the Volume up button. Just go to Settings > Camera and turn on Use Volume Up for Burst."

And be careful not to slide accidentally to the left when touching the shutter release, or you will take a burst. "Slide the Shutter button  to the left and hold it to take a burst of photos, then release it to stop."
