I don’t want to be connected to WiFi or internet for me to upload pictures saved on my iPhone on social networks or just view photos and vids on my phone, what must I do??

Uploading your Photos to a Social Networking Apps is purely your personal choice and the iPhone never uploads anything on its own unless you have enabled it in the settings on those apps.
However, for upload, you need the internet either through Cellular or WiFi.
