if i recently loaded an itunes gift card onto my account and i am not the organizer of a family sharing, circle, and ask to buy is off, will purchases made use my gift card come from my balance, or continue to use the organizers payment method?

If you have a credit balance from your iTunes gift card your purchases made will be with that credit, not the organizers card.
