Phone Call via Apple CarPlay with iPhone 12 Causes Echoback

My son, daughter, and I upgraded to iPhone 12. Now, if one of us calls the other from one of our cars using Apple CarPlay, a severe echo occurs for the person on the other end. (The person not in the car, when they talk, they can hear their own voice on a 1-2 second delay.) It's so bad that it makes talking impossible. The same car had no issues with CarPlay prior to our phone upgrades. And, other non-iPhone 12 users do not have the echo. Here are the tests cases we have performed and their results:

iPhone 12 to iPhone 12 in car 1 (2018 Atlas) - NO echo
iPhone 12 to iPhone 12 in car 2 (2019 Jetta) - echo
iPhone XR to iPhone 12 in car 2 (2019 Jetta) - NO echo
iPhone 12 to iPhone XR in car 2 (2019 Jetta) - NO echo
iPhone XR to iPhone XR in car 2 (2019 Jetta) - NO echo

As you can see, the problem ONLY occurs when an iPhone 12 calls another iPhone 12 in our Jetta via Apple CarPlay. (There is no issues with calling over Bluetooth, or using speaker phone. Only CarPlay.)

If you need help with CarPlay has some steps you can start with, including making sure that your CarPlay stereo is using the latest firmware from the car manufacturer.
