When I go to see the specs of my laptop, from the Apple symbol - About this Mac, the discrete GPU installed on this device does not show in the list under graphics. However, when I go into system report it shows that there is an AMD Radeon Pro 5500M GPU in the system. Is this something to worry about?

I own MacBook Pro 16'' with i7, AMD 5300M and this is totally normal. It is there and normally the discrete GPU won't be shown in "About this Mac" but when you're using the discrete GPU, you can check in the about and it will be shown in there.

Seeing the same thing on a MacBookPro 15" 2018 with Intel UD Graphics 630 and Radeon Pro Vega 20. The Radeon Pro Vega is not listed in About this Mac only in the System Report. Nothing to worry about. It's there and it's being used when you need it.
