With which OS does it go from 32 bit to 64?
Is there a list out showing what apps are 32bit and 64 bit?

Go64 application will tell you what is 32 bit and what is 64 bit applications installed on this computer.
As for where does OS change to 64 Bit Requirements - Starting in Catalina and Up - there is no workaround for Applications, Extensions or Drivers. If they are 32 Bit - they will not function - period.
