Airplane Mode Apple Watch
if my Apple Watch is in airplane mode, will my friends be able to see my activity rings and will I be able to share activity. Or does it not upload to iPhone until I turn off airplane mode?

Basically you are disconnected from networks then. However I believe it would still sync, if you turn on Wi-Fi separately:
