Can friends see Apple Watch activity in air plane mode ?
if my Apple Watch is in airplane mode, will my friends be able to see my activity rings and will I be able to share activity. Or does it not upload to iPhone until I turn off airplane mode?

Yes if you connect to Wi-Fi separately while in the airplane mode, then that sharing should again resume. See here for details:
