Searching on more than one folder, but not ALL folders, in Finder

I can't find a way to select more than one folder to do a search. For example, I would like to locate all jpgs on my device, except the jpgs in the Pictures folder.

Similarly, it seems like a long time ago, you could do a search, then sort the results by path - that would be another way to look outside the Pictures folder. I don't see that possibility now - does it still exist?

Thanks!

P.S. I've found some limitations on spotlight searches; maybe I just don't know all of the commands to use. I've used Houdah https://www.houdah.com/houdahSpot/ because of its ability to restrict folders, find file types, etc.
