Your iPhone 12 Pro Max has NFC (Near Field Communication) capability. There is no user adjustable setting option on the iPhone. You are therefore not finding it in Settings and Control Center. Your iPhone will automatically read NFC tags.

NFC is Supported automatically on iPhone XS, iPhone XS Max, iPhone XR, iPhone 11, iPhone 11 Pro, and iPhone 11 Pro Max and all iPhone 12 models.  NFC is Supported after turning on NFC scan mode from Control Center on iPhone 7, iPhone 7 Plus, iPhone 8, iPhone 8 Plus, and iPhone X."
