I have proof of payment from a fnb account I payed R6000 for a second hand iPhone X and I used the phone for about a few days and it required a software update and so I updated it and right after I updated it is now asking for the previous Owners ID

Can I unlock my device if I have this sort of proof of payment?

You can only get past the activation lock with the help of the prior owner. If you can’t contact the prior owner, then the phone is useless to you. Return it for a refund if possible or recycle it and buy a phone you can use.
