Hi! I've purchased a new MacBook Pro in May of 2021. When I access "about this Mac" it says MacBook Pro 16" 2019. I am wondering if this will be a problem, especially when determining value in the future. Also, it has a Touch Bar of which I am not a fan. Has the Touch Bar been discontinued on the later MacBooks? Thank you!

This is a brand new MacBook Pro. It is the only 16" MBP currently in the lineup.
You can not get any newer then that in a 16" MBP.
