If I sign up for family sharing, will my husband’s device automatically become populated with every book, piece of music or app I have on my devices? I DONT want this! I just want him to share my Elevate subscription.

If you sign up for Family Sharing, his device will remain as it is now. Since you share purchases in Family Sharing, he will be able to download your purchases if he wants to, unless you hide the purchase(s). He will have to initiate the download.
To share your Elevate subscription, you have to subscribe to the subscription as a family subscription.
