So after the upgrade to BigSur, (and purchase of new MacBook Pro) my Canon Pixma MG8250 will no longer do much more than basic printing (using the Apple driver). NO double-sided printing, scanner driver does not work.
Does anyone have any alternative ways to make sure it isn't just a big paperweight on my desk?!

Click once on the Desktop, click View in the menubar
select Go To Folder.
Enter this text
/Library/Image Capture/Devices
press Go
A new Finder window will open with Devices highlighted.
Control-click on CanonIJScanner app and select Open.
Does your scanner work now.
The Canon PIXMA MG8250 has built-in Apple AirPrint support when networked (wired/wirelessly). This should include both printing and scanning (via Apple Image Capture) functionality which is not automatically configured. AirPrint will not support the MG8250 with a USB cable connected.
Visit System Preferences > Printers & Scanners panel and right-click on the MG8250 device entry. Choose Reset printing system… from the secondary menu, and then re-add the MG8250 by explicitly selecting AirPrint and not Canon drivers.

Two-sided option is greyed out in print pane. Whatever the application.
Scanner application fails upon starting and offers error code "Failed to open a connection to the device (-21345)"

No. Nothing happened to be honest. Nothing opens programme-wise, and scanner still not working. Thanks for help.
Have you checked with Cannon to confirm that a newer compliant driver is not available and that none are to be issued? If not, then you can visit the link below where volunteers have written drivers for many printers which are no longer supported. Maybe there will be one that works for you. This is a safe site to visit.

Printing basic page is fine (set up wirelessly). Scanner fails to load consistently. (There is an error code but not currently home to report something like 216##)
Double-side printing is not an option to select through System Prefs.
Select Two-sided on the macOS, or application-specific print panel when printing from an opened document, not in any System Preferences pane. So the scanner misbehaves when using Apple's Image Capture? Do you have a USB cable still attached to the MG8250?
Checked, and the last OSX catered for is Catalina. Seems like lots of people been left in the lurch by the update.
