I want to create a sheet so each column splits into two text cells. Old posts say: Numbers/Services/text to columns. But I don't see that "Text to Columns" option in my number preferences.
Can someone walk me through this please?

You can install that service by downloading it here (Dropbox) and double-clicking it. If necessary give permission at System Preferences > Security & Privacy, and make sure Automator.app is listed and checked at System Preferences > Security & Privacy > Privacy > Accessibility.
After you install it you will see it in Numbers > Services > Text to Columns.
If you decide it doesn't do what you want you can easily remove it in Finder by holding down the option key and in the menu Go > Library > Services. Then delete it as you would any other Finder item.

Thank you...I followed your instructions, including adding the "automator" to my SystemPreferences/SecurityPrivacy/Accessibility. Then went to Numbers/Services, but all I found was "Split Text into Full Column" and "Split Text into Half Column", things got a bit confusing then. I attempted to select the column I want split into 2, but encountered a cvs error (?).
Can you walk me through what I do once I go to Numbers/Services?
When you click the link the downloaded file should appear in the Downloads folder. Find it their and double-click. If necessary give permission at System Preferences > Security & Privacy. That's it! Thereafter you should see it when you go to Numbers > Services in the menu.

I believe I have it: each column can have two numbers in them, I separate them with a space.
I was hoping there would be a separating vertical line, but couldn't make that work.

By vertical line do you mean the pipe character? It's there:

UPDATE:
Found the Text to Columns under General. When I click on it, I get "Add Shortcut" with a open field to type in. How do I add a "shortcut"?
