Thanks for the prompt feedback guys. My MacBook Air runs Big Sur, so no issue there, and suitable cables seem to exist. Hopefully I won’t need to restore the M1 machine anytime soon 😀
Yes as long as the Intel Mac is able to run macOS 10.15 Catalina.
