Unable to fully remove pairing on apple watch

Kept having unlocking problems with my series 3 hence I decided to just unpair then pairing it again. Managed to unpair it using the Watch app/ remove it from my Apple ID devices but my watch is still locked and seems like my stuff are all still in there, even after I've tried to hard reset etc.

So right now I'm locked out of my watch, I can't unlock it because I had the "Unlock using iPhone" feature as activation lock but since my Iphone no longer has my watch as a pairing, I don't know how to solve this.

Any help is appreciated, thank you!

To unpair and erase watch and remove Activation Lock

From a web browser, sign in to iCloud.com with your Apple ID.

Go to Find iPhone.

Click All Devices at the top of the screen.

Click your Apple Watch.

Click Erase [device]. Select Next until the device is erased.

Click Remove from Account.
