How to customize the apps it uses to Share

I can't figure out how to share a PDF file from my Apple IOS using e-mail.


When I highlight the file and click "Share" the apps it suggests are : Books, Acrobat, and Notes.


If I click on the "More" icon, it lists "Favorites" with those same 3 options. There is no option to manually add any other app.


This should be an easy thing to ask it to share the file via email, but I can't for the life of me figure it out.
