Transferring data from old iPhone to new iPhone

Hi - I am setting up a new iPhone12 and stuck on the step of tranferring data from my old iPhoneX to the new phone, phone-to-phone. The old phone says, "1 minute remaining," and has for the past 2-hours, and the apps that were "Waiting" to set-up on the new phone to update 2-hours ago still say, "Waiting."

I talked to a support person who said I need to wait it out, but I am beginning to suspect it is hung-up.

Is there a way to determine if its still working?
