what if I don't want to migrate certain apps or files. How to do this?

what if I don't want to migrate certain apps or files from my old imac to my new imac. There are apps and files from when I was working that I do not need now. How to do this?

iMac 21.5″, macOS 10.15

You move them manually by using Target Disk Mode. However what I would do, is to use the method below and then when migrated, uninstall the apps and/files you don't want from the new machine.
