When I click on a note title on my iPhone 11 Pro there is nothing there. The content of the note I've written has disappeared.

Try closing the Notes app and restarting your iPhone. Are you using Notes in iCloud, or just on the iPhone?
The notes I can't see the content of are in the Yahoo folder. Notes in the "On my iPhone" folder are readable
