My notes have come unsynced. When I go to my iCloud account the notes there are the versions from several days ago and I can't find notes I added in the past three days. On my phone only a few recent notes appear. Is there any way to recover my lost work? I had added a lot of data in the past few days. And what can I do to prevent this from happening again? This has happened before and I thought I had it all straightened out.

If you had your notes saved in iCloud and they're still in the Recently Deleted folder, you can use these steps to recover them: Delete and recover notes on iCloud.com
If you're missing notes on a device, you can use these steps to try and recover them: If you're missing notes on your iPhone, iPad, or iPod touch
If the notes are not available to recover, you would need to manually recreate them again.

Correct. Notes taking in passing are permanently lost. When I get the iTimeMachine I will go back and recreate them.
