As an educator, I’m curious why apple hasn't updated to allow teachers to screen record and screen mirror in the classroom at the same time since many have the iPads and Apple TV’s to project. Or is there a work around to make this happen?

I agree this should be possible. Best solution I can find is to start a Zoom meeting and record it while projecting your computer screen. You can then share your iPad screen and do what ever you want on it. Maybe also just run the Zoom meeting from your iPad? I haven't actually tried that.
From what I have been told by others, the iPad Pro can do both at the same time. It appears it may be a processor limitation. I haven't had a chance to test the claims, but the Zoom option is generally the simplest.
Why can you not screen record and screen play at the same time?
