You can't. Launchpad icon was changed to the colored squares from the original rocket icon.

Unfortunately, the Launchpad app lives on the Signed System Volume (SSV) in macOS Big Sur. This means that it cannot be modified in any way (unless you choose to disable SSV verification, and doing that is generally a bad idea).
Every time your Mac starts up, it measures the SSV to ensure that it only contains the system content that Apple provided. If it is modified in any way, your Mac will refuse to start up, as it is likely that malware has infected your system at that point.

You cannot change the icon. Unless you absolutely cannot function without the rocket icon there is no issue here. Just an aesthetic preference.
