I have two cars, and both have Bluetooth radios in the dash. I also drive a car at work (and it, also, has a Bluetooth-capable radio in the dash).
Whenever I get into ANY of these cars, iTunes will start playing over Bluetooth (when the Bluetooth is select on the in-dash radio).
I am using iOS 14.7.1 on my iPhone 11.
Where is the setting to disable this, AS IT IS DRIVING ME NUTS!!!!!!!

What to Try:
A. Unpair while in Park:
Try unpairing the phone. Perform this while in while in park. Then, pair it later on.
If that does not work...
B. View the Owner's Manual:
See what the Owner's Manual of your car says when you read it. It's probably being seen as the default device, or the closest device listed on [Connect to this device automatically] when detected.
