Apple Mail Default font for authored email messages

Why does Apple not allow you to stylize your email messages with a default font like every other mail client? The mail app on MacOS has remained largely unchanged for 20 years. I can only assume that Apple thinks that fonts should never be used, ever and the font allowed in an email message should only be determined by the receiver. As long as I choose an email font and size for each and every email message individually it is allowed, but not by default. The Font selection in Preferences only show how you see messages that have no individually defined fonts. To see this, change your message font and see that your sent messages now show a different font.

If you sent e-mail as plain text, then whatever font you use on your device will be absolutely irrelevant for the receiver.

For example, I use Menlo 24 - rather big, because my eyesight is not so great.

Say you compose rich text mail using Helvetica 12. That is what I would receive.

But your e-mail is in plain text, it does not contain any font information whatsoever. Whatever you use does not affect me, the recipient.

I’m not sure why you think it’s being forced on people,. I don’t want to see anything but plain text. I don’t want to see what you think is cute, “professional, interesting, enhanced, or otherwise adulterated. I just want to see the text. The rest of it it’s just useless garbage.

Many fonts are unreadable. I don't know why they exist.

Because I have never thought wow I hate this email because they used a non-standard font. I am not annoyed by the font somebody Chose. But, Now I know people are very concerned about the font somebody else used in an email. I’m sure my comic sans is ruined many days

I just don't understand why people think they need to change the font, style, or anything else. If you can't get the message across in the subject, I really don't have time to read the rest of the cruft. If the subject is interesting enough, I might actually read what you send, but if I have to filter through what you think is important as identified by italics, bold, color, or anything else, I don't care what you have to say. If it is that complicated, call me.
