Zoom Security and new MacBook Air

My old MacBook pro used to clearly tell me such and such a program wants to access the operating system. Today i tried to install this conference software called zoom (I think the fan people influencers are all selling it) and my MacBook asked me to authorise with touch id.

Is this because zoom wants to access / modify my operating system, or is it just because its not from the app store?

Does the MacBook still warn when a program is planning to access the operating system?

MacBook Pro 13″, macOS 11.5
