Accessing the # symbol on an Ipad Pro magic keyboard

That should be a combination of the Shift-Key and the the number 3 Keys. Push and Hold Down the Shift Key and then press the 3 key. Does this not work on your Magic Keyboard? OR did I misunderstand your question?

What language is your keyboard? # is printed right on shift 3 for US, and that should work unless you have something different .
