Is there a way to backup my iphone from itunes?

Hello anyone/everyone. My phone is stuck in a "boot loop" and cannot be recovered. It will not update or restore so i cannot access my personal information on my phone. I have acquired a new phone and I am in need of two things. 1 - A way to backup all my information, on the old phone, without access to the old phone and 2 - A way to delete all important data on the old phone. I greatly appreciate any help or advice in this matter and I thank you for your time.
