Hello beast225 and welcome to Apple Support Communities. It appears you are having some difficulty allowing a specific game app to be played outside of the daily App Limits provided by Screen Time.

Go to Settings > Screen Time > App Limits and tap on the Games category. This will expand that section so you can see all apps under that classification. If you have previously added the entire category to App Limits, tap the radio button next to the Games category to unselect it. (If you have not previously selected the entire category, you can skip that last part.) Once the entire category is unselected and the category is expanded, you can choose specific apps within that category. Choose the apps you want to limit and then tap Next in the upper right-hand corner of the display and then set a time limit for the category on the following screen.

This will remove specific apps chosen by you from App Limits without removing them from Downtime.

Cheers.
