How can I update my phone number
Apple Pay is showing a different phone number for me but does show correct email. How do I update the phone number?

Where do you see your phone number in Apple Pay? If it is in Settings/Wallet & Apple Pay you can edit the phone number there just by tapping on it. Note that this does not have to be the number of your phone (although it can be). It is a contact number associated with your Apple ID. You can have more than one number, also. To change it add the correct number, then delete the wrong number.
If you open a web browser and log in to https://appleid.apple.com you can also edit your contact and trusted phone numbers there.
