how do I turn off notifications for mail?

Go to System Preferences > Notifications.

Scroll to Mail in the list on the left and click the switch to off for "Allow Notifications...".

This is the how to for Catalina... IIRC it's similar in High Sierra. If not, I'm sure someone will correct me. 👍🏽
