Why doesn't the apple watch transmit heart rate over bluetooth to other fitness equipment so I don't need to also wear a bluetooth heart rate chest strap. This is so freaking dumb, proprietary, vendor lock, money grubbing BS.

What is the world are you going on about? The Watch can connect with some gym equipment that is designed to sync with the Apple Watch. If this is very important to you check with the fitness equipment manufacturers and ask them which wearable they can connect with and buy that one.
Some is not good enough! It should connect to any gym equipment that supports Bluetooth and ANT+ heart rate monitors. They are called standards for a reason, but Apple tries to license their gym connect to make a buck. Not cool! There are so many devices that Apple Watch could connect to and transmit heart rate, but doesn't. It just makes the world a worse place, not a better place.
Since the Watch is not a Bluetooth heart rate monitor it is more difficult than you think and they do not charge companies to be compatible with the Watch I fail to see how this is greedy. But given what you have said you should really sell your Watch and by a wearable that does what you want to do.
