Keep finding conflicting answers: is a series 1 Apple Watch able to update and pair to an iPhone 8 running iOS 14.7.1?

have reset the watch repeatedly, but I am NOT going to risk resetting the iPhone. When I set up the watch (gifted from a friend) it ultimately says (on the phone during pairing) that the watchOS (3.3.2) is up to date. Clearly that is woefully old OS.

Is there a workaround or is the series 1 watch now just truly an ornament given iOS 14?

It's possible with great difficulty;

If you see "Unable to install update" when trying to update Apple Watch Series 1 or Series 2

Thanks for the information.

I failed to mention that this is a gifted older Watch that has been scrubbed so I am trying to set this up as a brand new device (starting with language choice and region) so there are no prior set up or menus to get to. Hope that makes sense and clarifies my dilemma.

I have a series 1 watch paired to an iPhone X max running iOS 14.7.1 (and just upgraded to iOS 14.8). The watch will only update to watchOS 6.3 however, but it works.
