The M1 has support for one external monitor.
what everyone else already said, PLUS:
When you invoke Mirror Displays, it sets the two displays to EXACTLY the same compromise resolution and timing, and runs them off ONE rasterizer/display-generator.
The MacBook Pro 13-in with Apple-Silicon M1 has only one available display-generator, so if you do manage to turn off mirroring, one of the displays will turn off.
You can't connect 2 external displays to a M1 MacBook Air/Pro.
