I have an Apple Watch Series 4 currently running WatchOS 8 but it did not have the assistive touch option. I also heard that Apple Watch Series 5 did not have this option as well as the Series 3. Please help! Is this option only for Apple Watch SE and newer?

Yup, according to the watchOS 8 user guide AssistiveTouch only works on Series 6 and SE models. (And we assume the Series 7 when released.)
