After the new watch os update, finding that the Mickey and Minnie watch faces completely disappear at random times. Tap to speak continues to work but no character or clock. Powering down and back on brings everything back for 12–18 hours then it happens again with the same results.

If that doesn't help, the next steps would be to unpair and pair your watch again and restore from the backup just created. This should result in no loss of data. It deletes all temp and corrupted files and re-indexes the file system.

That doesn’t solve anything. Mickey/Minni mouse disappear at random times, black screen, complications still there but no Mickey.
reset watch works fine, all back to normal for about one day then it fails again. It’s not a sync issue with iPhone, it’s a watch OS 8 issue!
Apple support don’t understand this fault unfortunately and keep saying to unpair/repair, which achievers nothing.
I have exactly the same issue and so does my wife with her watch 6.
both since the watch OS 8.0 update.
