I edit suggestions appear on the taskbar above my keyboard? I have an old email that’s no longer valid and isn’t associated with ‘my card’ in contacts, but it always shows up as a suggestion, instead of my current email addresses.

Thanks for using the Apple Support Communities. We understand that you're running into an issue with the AutoFill feature for Safari on your iPhone. When you go to Settings > Safari > AutoFill, do you see the slider is in the ON position next to "Use Contact Info"? If so, next to "My Info" is the correct contact card selected for you? It's possible to have multiple contact cards, so it's best to check just to make sure.
