Using external drive for storage on MacBook Air

I plan to switch from a desktop iMac to a MacBook Air, but I won't have enough internal storage for all my files. How do I copy all my files (documents, photos, videos, music) now on the iMac to an external drive and make that the default storage drive for the laptop?

I use the Finder Copy/Paste function. I like direct control over the process and the ability to pick and choose exactly which files and Folders to move.

If you use Finder, once data is copied and verified damage free, delete the now copied files off the internal drive.
