Hello,
I seem to be unable to edit an email that has been entered on the to: field. I usually work around it by copying and pasting it into the email body, editing the typo and then pasting it again on the to: field.
am I missing something? Is this a “feature”

Yes.
That string has been determined to be properly formatted to qualify as an email address. So it’s there, and may be removed or supplemented with additional addresses.
Not a very useful feature then! Thanks for the reply :) It would be nice to hace a tap and hold or 3D touch option to edit said string
