Pretty basic question re: the Mail "to:" field (but it's annoying me!). At present as soon as I enter an address to receive an email the cursor moves to the BC field; how do I change that so it stays in the "to" field and only goes to BC when I enter return or otherwise click on the BC field?

Solved it! Between you, the two replies got me paying more attention to what I'm doing when entering email addresses, so I realise that I was – by force of habit in "another email client app" that I have now abandoned in favour of Mail – using the tab key to select an address from a list of addresses. So I now have to break that habit and use the enter key.

I cannot reproduce the behavior you are describing. Pressing enter does not move between the fields in a mail message for me.
You may want to test in Safe Mode and see if the problem still persists. If not, then there must be some system modification involved.
Is one accidentally touching the Tab Key while composing the e-mail ?
Bye the way Monterey 12.01 is out dated.
The newest version release Dec 13, 2021 version 12.1 may offer some big fixes
