If I bought AirPods on Amazon and had to replace them, does my AppleCare transfer over?

AppleCare transfers to a different owner, not a different device.
But it's not clear what "had to replace them" means exactly.
If AppleCare was involved in performing the replacement, then there is some warranty coverage left on the replacement AirPods. If you purchased a new set of AirPods, then they are warranted against factory defects for one year from their purchase date.
AppleCare can transfer to devices as long as it’s the same device, so it’s best to do research before misinforming people :)
As for the replacing, I had to replace the AirPods, like send in my old ones and get a replacement in the mail

Nope!
The transfer might be possible if AppleCare was involved in the first purchase and the "same device" was performed under the existing AppleCare plan. This is stated both in my response above and the article linked at the top of this thread.
Yes ... and I (and the article) have stated and acknowledged that - items replaced under AppleCare are eligible.
Your statement "AppleCare can transfer to devices as long as it’s the same device" includes additional devices and is therefore incorrect.
If you scroll down, it says it can be transferred if the item was replaced
