Hi,
My old IMAC is slowing down now and I’m planning to buy a new MacBook Pro with M chip to replace it. Just wondering if I can use the old IMAC as an external monitor for the new MacBook rather than recycle it? And if so how would I connect the two?

You can use an aftermarket external display with most Mac’s including your MacBook Pro.

As for slowing down? That is common for the older iMac, but not so common for a new MacBook Pro unless you have installed some third party AV or other needless junk-ware.
To find out, get and run EtreCheck Pro on your MacBook Pro.

Thanks. So is there a cheaper way of having a good quality monitor than having to fork out for a new IMAC as well as a new MacBook Pro? Both my 2009 iMac and MacBook Pro slowing down now.
