What do you do regarding a SIM CARD when transferring data from an old iPhone to a new iPhone

You can move the SIM card to your new phone or leave it in the old one.
If the new phone can connect to a 5G network, you should get a new SIM to have that support.
The SIM does not have any of your Apple information, so leaving it the phone does not put your data at risk.
