Where I work the LTE service it terrible and I have to disable it to use 4G. After installing iOS 15 I no longer have the option to do that which makes my iPhone 11 Pro Max unusable. Is there a way to do this I'm not aware of in this version of iOS?? Also whoever decided to change this is a bonehead.

I am highly irritated at this subject this morning as well. At my workplace, and even some areas in my community, nothing will load on LTE. For the last two years, I have made it habit to leave my phone on 4G unless I am near a big city with good LTE service. I installed the iOS 15 update last night, and now today my phone is essentially useless at work. Not only is it an inconvenience because I cant use any apps that use data, it also bothers me thinking that my pregnant wife might not get a hold of me immediately during an emergency. Apple really needs to quit taking things out of their OS updates without letting the end user know before installing.
Didn't work for me. Still only have Data Roaming and Low Data Mode options in Cellular Data Options.
Yeah. I need to check if android has the same issue. Because I'm about done with iPhone of I can't even take a stable call

No, it will not. Only the iPhone 12 series and above are 5G capable. The iPhone 11 is not capable of supporting 5G, it requires a different chip.
I've had 5G work on my phone.
But it was in a city area

It MIGHT be hidden behind the WiFi call option tho, since WiFi calls and VoLTE calls are enabled the same way, haven't checked this one yet.
It was removed by the Carrier Settings pushed by your carrier that apply to your particular version of iOS.
Then why are many people that WORK for carriers and deal with this worldwide saying the opposite? Do you work for a carrier?
If it was removed as a carrier settings option, it was done at the suggestion of carriers.
Only at work means it's the cell tower that serves your workplace.
It sounds like their LTE antennas are not properly optimized for the frequency it is assigning you to.
