On iCal, you can color coordinate different calendars. On Outlook, you can color coordinate things within one calendar.
The problem I'm having is the sync between Outlook and iCal is my Outlook calendar is showing up as one color on iCal, when I have a multitude of colors within Outlook.

We understand that you want your calendar for Outlook to show the same in Calendar as it does in the native app. When you add a calendar to the Calendar app, you can choose which custom color you want to represent that calendar. However, you can't change the color of each event for the color.
Outlook calendar would be imported as a whole and you would choose the color for this calendar. You can read more in the Calendar User Guide.
