Usage of Apple Watch (GPS+Cellular) without the e-sim

Hey everyone !

I am Purujit. I have a question in mind. Could you please help me come to a suitable conclusion ?

I have ordered Apple Watch Series 7 (GPS+Cellular) version today. If I don't provide it with the e-sim, can I still use it as the GPS version i.e. enjoying all the features of the GPS version except the "Call and message without having the phone nearby" features ?

If there is a built-in e-sim in the apple watch then how do I know which network operator it belongs to and how do I activate it and pair it with my Vodafone sim card in the phone?

The cellular watch has a built in Esim that uses it's paired phones number.

And if you decide not to activate the cellular plan then you can use the watch as a GPS only version.
