Add driving licence not showing as option in wallet. IOS 15
The option to add a DL to the wallet is not showing as an option. i only have debit/credit card or transit card options available

That's correct. This option is a coming feature, which will appear in a future release. AND, it will only be available to people who live in states which have approved uploading a drivers license to Apple Wallet.
This means you will need to live in one of the following for this feature to be available to you:
Arizona, Connecticut, Georgia, Iowa, Kentucky, Maryland, Oklahoma, and Utah are among the first states to permit state IDs and driver’s licenses in Wallet to their residents. If your state is not on the list, you need to petition your state to sign up for this.
